It’s glorious fall and the apple harvest is overflowing markets with apples of all colours and sizes. Time to find some new, healthy ways to use the delicious bounty. Here are three healthy recipes using fresh apples and three websites to find many more tasty ways to use them.
Apple Pie Oatmeal
3 cups milk
1 1/3 cups uncooked oats
½ t. salt
¼ cup brown sugar
3 T. butter
¼ cup maple syrup
Slices of two apples
Apple pie spice
Combine the first four ingredients and put in a slow cooker overnight. In the morning add the butter, syrup and apples. Cook 20-30 minutes longer or until apples are tender. Sprinkle with apple pie spice and enjoy.
Apple, Ham and Cheese Sandwiches
1 ½ T. mayonnaise
2 t. Dijon mustard
4 slices of toasted sourdough bread
¼ cup sliced shallots
Thinly sliced ham
1/3 cup shredded cheese (firm varieties are best)
½ t. pepper
1 T. olive oil
½ t. sherry vinegar
2 cups fresh arugula
1 tart apple peeled and thinly sliced
Mix mayo and mustard and spread on toast. Layer shallots, ham, cheese and apple. Broil for three minutes. Add arugula and drizzle with vinegar and oil. Serve.
Roasted Apple and Cheddar Salad
Dressing: 3T. red wine vinegar, 2 T. apple juice, 1 T. olive oil, 2 t. Dijon mustard, 1 T. honey and salt and pepper to taste.
2 Fuji apples peeled and cut into wedges
2 T. olive oil
4 sprigs fresh thyme
¼ cup chopped walnuts
3 cups baby spinach
3 cups boston lettuce, torn
3 cups endive, torn
2/3 cups grated sharp cheese
Preheat oven to 400 degrees. Whisk dressing together. Toss apple wedges in 2 t. oil and mix with thyme. Spread on baking pan and roast until soft and golden—about 25 minutes. Discard thyme.
While apples are baking, toast walnuts for five minutes. Combine greens and divide onto six plates. Drizzle greens with dressing and top with cheese, apples and nuts. Serve immediately.
