5 Healthy Spring Recipes for Grandkids

Spring is here and Easter is past. Everyone has had more than their share of sweet treats. Maybe you and your grandkids are looking for less sugary recipes to make together. Here are five easy and delicious recipes to make together.

Children love to cook. Remember to teach basic safety rules while working together in the kitchen and allow participation in age-appropriate ways. Even the youngest can pour pre-measured ingredients into a bowl, help stir and, of course, they make great tasters.

Easy Pizza Wraps

Ingredients

4 flour tortillas

6 T. spaghetti sauce

2 cups shredded cheese

Italian seasoning

Preparation

Heat oven to 400 degrees and toast tortillas for five minutes. Remove from oven and spread each tortilla with spaghetti sauce. Sprinkle cheese over the sauce and season with Italian seasoning. Toast 5-7 minutes then let an adult fold the sides over to form wraps.

Serve when still warm.

Mini Quiches

Ingredients

2 prepared pie crusts or make your own crust

6 eggs

1 cup milk

3-4 pieces of cooked bacon, crumbled

1 1/3 cups grated cheese (gouda, cheddar, or mozzarella)

½ cup chopped spinach, fresh or frozen

6 sun dried tomatoes chopped and mixed with 1 T. olive oil

Salt and pepper

Preparation

Preheat oven to 350 degrees. Grease muffin tins and press dough into each tin. Crimp edges. Beat eggs and milk together then add salt and pepper. Whisk in bacon crumbles, spinach, tomatoes and cheese. Great for a brunch or breakfast.

Pour into cups and bake for 35-40 minutes until the egg mixture is well-set.

Breakfast Cookies

These healthy cookies are a good source of fiber, protein and iron. For additional nutritional value add raisins to the mix.

Ingredients

1 large banana

¾ cup sugar

¾ cup peanut butter

¼ cup water

2 eggs

1 ½ cup flour (may use ½ cup whole wheat pastry flour for a healthier cookie)

½ t. soda

½ t. salt

2 cups quick cooking oats

½ cup nuts, chopped

¼ cup mini chocolate chips

Preparation

Preheat oven to 350 degrees. Mash the banana, then beat in sugar, peanut butter, water and eggs. Add the flour, soda and salt. Stir in the remaining ingredients and drop onto an un-greased baking sheet. Bake for 14-18 minutes until nicely browned. Serve with a kid-friendly drink.

Crazy Strawberries

This Italian recipe will please tasters of all ages. Some people enjoy adding a bit of freshly-grated black pepper to the vinegar/sugar mix.

Ingredients

¼ cup balsamic vinegar

2 T. white sugar

Two pints fresh strawberries, hulled and quartered

1 oz square of unsweetened chocolate, grated

Preparation

Mix the vinegar and sugar, add berries and allow to marinate for 10-15 minutes. Then sprinkle the grated chocolate over the top and serve immediately.

Quick and Easy Hummus

This recipe is both healthy and inexpensive when compared with deli prices. Children will enjoy using it as a dip or spread with carrots, celery, crackers, tortilla chips or pita bread.

Ingredients

1 15 oz can of garbanzo beans

4 t. olive oil

4 t. lemon juice

½ t. salt

1.2 t. cumin

Preparation

Blend all ingredients in a blender and refrigerate.
