Weekend mornings are the perfect time to invite good friends over for a special meal. Sleep in a bit, then put on the coffee and use the following recipes to wow your friends and grandchildren with a brunch worthy of the good company.


Apple Raisin Muffins

Sausage and Pepper Frittata

Fresh Fruit Salad with Honey Vanilla Yogurt

Coffee, Tea


Apple Raisin Muffins


1 cup water

2 cups sugar

2 cups grated apple

2 cups raisins

1 cup butter

1 t. cinnamon

2 t. grated nutmeg

½ t. ground cloves

1 cup chopped walnuts

2 t. baking soda

3 ½ cups flour


Combine the first eight ingredients in a saucepan.  Bring to a boil, then cool. In a bowl stir the nuts and baking soda into the flour. Add apple mixture, stir until blended. Bake in muffin tin at 350 for fifteen minutes or until done.


 Sausage and Pepper Frittata


Olive oil

½ lb. Italian sausage

1 red pepper, diced

1 yellow pepper, diced

1 cup grated parmesan

12 eggs beaten with ¼ cups water



Preheat oven to 350 degrees. Coat a non-stick pan with oil. Brown sausage then sauté peppers until soft. Add parmesan to beaten eggs and add salt. Pour egg mixture over the sausage and peppers stirring to even the mixture. Cook until eggs are done on the bottom and sides. Place in preheated oven for seven or eight minutes until eggs are finished on top. Remove from pan onto cutting board. Cut in wedges and serve.


Fresh Fruit Salad with Honey Vanilla Yogurt


2 cups plain yogurt

2 T. honey

½ t. vanilla

½ orange, juiced

1 banana

½ pint blueberries

½ pint raspberries

1 pint strawberries hulled and halved

1 bunch green grapes, halved.


Mix together the yogurt, vanilla and honey. Combine orange juice with banana and then add berries and grapes. Mix gently. Place in serving dishes and top with yogurt mixture.
