Get out on the deck and enjoy these two healthy fish recipes.

Both are simple to prepare and will “wow” your guests.

 

 

 

 

Spicy Salmon Kebabs

Ingredients

2 T. chopped fresh oregano

2 t. sesame seeds

1 t. ground cumin

1 t. salt

¼ t. crushed red pepper flakes

1 ½ pounds skinless salmon fillets cut into 1” pieces

2 lemons sliced thinly

2 T. olive oil

Preparation 

Use bamboo skewers pre-soaked in water for one hour. Mix spices.

Thread salmon chunks on the skewers alternately with the lemon slices.

Brush with oil and grill on medium heat for 5-8 minutes, turning once. Fish will be opaque when done.

 

 

Tequila Fish Tacos

 Ingredients

4 T. lime juice

3 T. tequila

3 t. chopped cilantro

1 t. chopped garlic

1 t. ground cumin

1 pound white fish

3 T. rice wine vinegar

1 t. canola oil

2 ¾ t. honey

1 ½ t. salt

½ t. pepper

3 cups thinly sliced red cabbage

¾ cup sour cream

3 T. milk

1 ½ t. grated lime zest

½ avocado, sliced

8 corn tortillas

2 limes, quartered

Preparation 

Use a resealable plastic bag for the marinade. Combine 3 T. lime juice, the tequila, 1 T. cilantro, garlic and cumin.

Add the fish and turn to coat. Refrigerate one hour, turning once.

In bowl mix vinegar, oil, 2 t. honey, ¼ t. salt and ¼ t. pepper. Add cabbage and toss.

In second bowl mix sour cream, milk, zest, remaining lime juice, honey and salt.

Heat grill. Remove fish from marinade and season with salt and pepper. Grill, turning only once. Grill four minutes per side.

Remove fish from grill to a cutting board and chop.

Stir remaining cilantro into cabbage. Grill tortillas 30 seconds on each side. Assemble tacos with sour cream in shell then add fish and slaw.

Garnish with avocado and serve with lime wedges.
