We’re always on the lookout for menu ideas that are both nutritious and appealing.  Our kids will always want pizza and burgers, but they will also love this spaghetti and meatball recipe that has a hearty dose of health infused thanks to whole grains. The meatballs are enhanced with bulgur and whole wheat bread crumbs to increase fiber and decrease the amount of meat used. The spaghetti or linguine used will be whole wheat as well. This tasty meal will make whole grain believers out of your little ones.

 

Old-fashioned Spaghetti and Meatballs with a Twist

Ingredients

1/3 cup bulgur soaked in hot water for 30 minutes

4 oz lean ground beef

4 oz Italian sausage

1 medium onion, chopped

2 eggs

3 cloves garlic

1 t. dried oregano

½ t. salt

½ t. pepper

1 cup fresh whole wheat bread crumbs

1 lb. whole wheat spaghetti noodles or linguine

4 cups prepared marinara sauce

½ cup slivered fresh basil leaves

½ cup parmesan or romano cheese

 

Preparation

Combine all meatball ingredients and form into 1” balls. (about 24)

Place on a greased rack over a foil-lined baking sheet.

Bake at 350 degrees for 25 minutes.

Heat sauce and add meatballs. Simmer, covered for 20 minutes.

Cook noodles and drain. Add basil. Serve meatballs and sauce over noodles and finish with grated cheese.
