Busy families are all too familiar with this scenario. Dad will be home late from work, the kids have a music program at school and Mom has been running errands all day. It’s time to eat dinner and there’s no time to prepare it. Instead of driving through the fast food restaurant on the way to the evening’s activities, why not try one of these fifteen minute dinner ideas. Tummies will be full and satisfied and Mums and Grannies will feel good about serving a healthy dinner in a hurry. Choose from one of the following:
Breakfast or dinner:
Eggs with tortilla chips, salsa and cheese
Ingredients
1 ½ Tbs butter
ten eggs
2 Tbs milk or water
1 t salt
¼ t black pepper
1 cup shredded jack cheese
¾ cup salsa, drained
1 cup crushed tortilla chips
Preparation
Melt butter and add beaten eggs, salt and pepper. Cook 4-5 minutes until desired consistency. Add cheese and fold in salsa and chips. Serve.
No Cook Roast Beef and Cheddar Roll-ups
Ingredients
4 oz softened cream cheese
2 Tbs prepared horseradish
Lettuce
8 oz deli roast beef
4 oz thin-sliced cheddar cheese
4 large flour tortillas
Preparation
Combine cream cheese and horseradish and spread on tortillas. Layer lettuce, roast beef and cheese and roll up. Slice and serve.
Angel Hair Pasta with Spicy Shrimp
Ingredients
12 oz angel hair pasta
1 Tbs olive oil
2 cloves garlic minced
1 lb. deveined shrimp, pre-cooked
¾ cup white wine
¼ tsp crushed red pepper
Salt
1 Tbs butter
Preparation
Cook and drain pasta. Heat oil and sauté garlic one minute. Add rest of ingredients and toss with pasta. Serve
