What is gluten? It’s a protein composite found in foods processed from wheat, barley and rye. It gives elasticity to bread doughs and provides the chewy texture we love in breads. It is found in nearly all packaged food products from cookies, to crackers to pretzels and it’s in nearly all baked goods.
