Three yummy breakfast surprises for the kids and grandkids. 

While the grandchildren may be more focused on presents on Christmas morning rather than the breakfast menu, they’ll love one of these tasty items. Pair with some crisp bacon or zesty sausage and a glass of orange juice for a hearty holiday breakfast.

Orange Pecan French Toast

This one can be made the night before so all you have to do is pop it in the oven on Christmas morning and then wait for the rave reviews

Ingredients

1 cup brown sugar

1/3 cup melted butter

2 T. light corn syrup

1/3 cup chopped pecans

1 t. orange zest

1 cup orange juice

½ cup milk

3 T. white sugar

1 t. cinnamon

1 t. vanilla

3 egg whites

2 eggs

1 T. powdered sugar

12 slices soft French bread

Preparation

Mix brown sugar, melted butter and corn syrup. Pour into a glass baking dish and sprinkle with the pecans. Whisk the orange zest, juice, milk, cinnamon, vanilla, egg whites and eggs. Pour over the bread and press to help absorb. Refrigerate overnight.

In the morning take out and leave at room temperature for 20 minutes then bake at 350 degrees for 35 minutes. Dust with powdered sugar.

Gingerbread Pancakes

The aroma of these is almost as good as the rich taste. And they’re quick and easy to make.

Ingredients

1 ½ cups flour

1 t. baking powder

¼ t. baking soda

¼ t. salt

½ t. ground dried ginger

1 t. cinnamon

1 egg

½ t. vanilla

¼ cup molasses

1 cup water

Preparation

Whisk the dry ingredients together and set aside. Beat the egg with the vanilla, molasses and water. Add the dry ingredients. Fry on a lightly-oiled griddle. These are nice served with fruit compote, or syrup and whipped cream.

Gluten Free Waffles

This recipe will delight those who have moved to gluten-free diets. The waffles come out crisp on the outside and tender on the inside.

Ingredients

3 cups sorghum flour

1 cup tapioca starch

¼ cup sugar

4 t. baking powder

2 t. xanthum gum

½ t. salt

4 eggs, separated

31/2 cups vanilla almond milk

½ cup applesauce

2 t. vanilla

Cooking spray

A little coconut oil if desired

Preparation

Mix the dry ingredients. Whisk egg whites until foamy and they make soft peaks. Beat the yolks, milk, applesauce and vanilla. Add the dry ingredients. Fold in egg whites. Cook on an oiled waffle iron. You may add a few blueberries if desired.
