Ingredients:

500g of Spaghetti #5

1  medium sized onion finely chopped

2-3 medium sized zucchini

3 eggs 

½ a chicken stock cube

A little Extra Virgin Olive Oil

2-3 tablespoons of grated Parmesan cheese

A dash of salt and freshly ground black pepper

Preparation:

Take 2 of the eggs and beat up the yolks, add the third egg with the Parmesan cheese and a dash of pepper.

Chop the onion and slice the zucchini into rings  and fry them in a non-stick frying pan with a little olive oil.

Towards the end add a little of the chicken stock to keep it moist. 

Add a large pinch of salt into a large saucepan of boiling water ,

Add the spaghetti and keep it at a medium boil for approx 8 minutes ( nearly all pasta packets have the correct cooking time).

Drain the spaghetti well and mix with the eggs and Parmesan and at the last minute add the hot fried chopped onion and zucchini rings.

Serve with the parmesan cheese

This can be served as a first course or as a main course accompanied by a nice  salad.
