4-5 medium size zucchini

A large onion finely chopped

A chicken soup cube

A small cup of Extra Virgin Olive Oil

A dash of salt and freshly ground black pepper


Cut the zucchinis into rings approximately 1cm thick.

Place the zucchini rings and the finely chopped onion in a non stick frying pan together with the olive oil .

Add the chicken soup cube and a small glass of water.

Continue cooking over a medium heat adding a little hot  water as you go along.

This will take about 10-15 minutes .

Adjust for salt and pepper.

Serve as a vegetable side dish to your main course.

A suggestion – this is a delicious side dish to “ Spaghetti Carbonara” as the flavours go together very well.

You can also use it as a sauce for any pasta
