Ingredients:
500g of n°5 Spaghetti
5-6 medium sized onions ( a hint from Zia Mirella – use either brown or red onions, they are much tastier)
3 eggs
½ a chicken stock cube
A little Extra Virgin Olive Oil
2-3 tablespoons of grated Parmesan cheese
A dash of salt and pepper
Preparation:
Separate 2 of the eggs and beat up the yolks with one whole egg with the Parmesan cheese and a dash of pepper.
Chop the onion into fine strips, fry them in a non stick frying pan with a little of the olive oil and towards the end add a little of the chicken stock to keep it moist.
Add a good pinch or two of rock salt into a large pot of boiling water , add the spaghetti and keep it at a medium boil for approx 8 minutes nearly all pasta packets have the cooking time.
Drain the spaghetti well and mix in the eggs and Parmesan and at the last minute add the hot fried chopped onions.
Serve with a separate bowl of Parmesan cheese – some people like to add a little extra.
This can be served as a first course or as a main course accompanied by a nice salad.
It’s a good carbonara dish for those who don’t like bacon.
