(Spaghetti with Eggs & Bacon)
500g of n°5 Spaghetti (there are lots of different types of spaghetti – look for the one that has N°5 on it
3–4 slices of bacon
½ glass of dry white wine
½ a chicken stock cube
A little Extra Virgin Olive Oil
2-3 tablespoons of grated Parmesan cheese
A dash of salt and pepper
Use 2 of the eggs and beat up the yolks, add the Parmesan cheese and a dash of pepper to the 3rd egg
Chop the bacon into strips and fry up in a pan with a little of the olive oil and add a little of the dry white wine.
Add a pinch of rock salt into a large pot of boiling water, ( if you use table salt put in a little less, you can always adjust it at the end.)
Put in the spaghetti and keep it at a medium boil for approx 8 minutes , nearly all pasta packets have the cooking time.
Drain the spaghetti well and mix with the eggs and parmesan and at the last minute add the hot fried bacon strips.
Serve with a separate bowl of Parmesan cheese – some people like to add extra.
This can be served as a first course or as a main course accompanied by a nice salad.
