Ingredients:
A large sole for at least 4 people or better still get 4 small soles , one for each person
A hint from Zia Mirella โ you can use frozen sole โ it is excellent and very fresh as the fish are frozen on the fishing boat as soon as they are caught.
A small bunch of parsley
A small glass of dry white wine
The juice of one lemon
A little white flour
A large pat of butter
A dash of salt and pepper
Preparation:
Lightly flour the whole fish.
Melt the butter in a large non stick frying pan.
Gently cook the sole on a medium heat on both sides for a few minutes.
Add the white wine and the lemon juice and continue cooking until the liquid
has nearly evaporated .This should take another 5-6 minutes.
Add the chopped parsley and a dash of salt and pepper to taste.
Serve with boiled baby potatoes with a little butter and some of the chopped parsley.
This is a dish you have to make at the last minute but it is simple and quick .
