120g unsalted butter

2 eggs

200g of Vanilla sugar – this is normal sugar which you have flavoured with some vanilla essence

A large sponge base ( Buy it at your local supermarket or your baker already prepared – so much easier and Zia Mirella’s recipes stand for easy cooking!

The grated  peel of one ( or two) lemons

A little milk

A small packet of powdered yeast.

2-3 tablespoons of  caster sugar


Melt the butter at room temperature so that it is soft but not to the point of being liquid.

Add the vanilla sugar and mix until creamy and then add the eggs yolks and the lemon peel.

Mix the yeast powder into the flour and sieve slowly over the mixture stirring continuously.

Should the result be too thick ( it should have the consistency of a heavy cream) add in a little milk.

Beat up the egg whites until they are stiff.

Gently spoon in the stiff egg whites and mix it all together.

Butter all sides of a baking dish, lightly sprinkle with some flour and pour in the cream.

Heat your oven to  200° and bake for 25 minutes.

Remove from oven , turn upside down and sprinkle with the caster sugar.

Zia Mirella says the trick is to dust the baking dish with the flour, this ensures that when you turn it upside down the sides don’t stick!!!.

Decorate with a few thin slices of lemon peel and serve.
