TALEGGIO CHEESE MOUSSE
Ingredients:
100g of “Taleggio” Cheese
About a dozen crushed walnuts
A nob of butter
Preparation:
Put all the ingredients in to your mixer
Serve the “Taleggio” Mousse in a small bowl and place the bowl on a platter with crackers and French toast.
( A hint from Zia – you can substitute the” Taleggio” cheese with Stilton or Gorgonzola and nearly all good super-markets have a good choice of Italian cheeses )
GOATS CHEESE MOUSSE WITH RED PEPPERS
Ingredients:
One packet of Goats Cheese
1-2 red peppers
A pinch of salt and ground black pepper
A drop of Extra Virgin Olive Oil ( adjust the oil at the end)
Roast the peppers in the oven or you can do it on a griddle pan if you prefer.
When the peppers are soft – gently peel off the skin.
Cut the peppers into strips and add a little olive oil and a dash of pepper .
Put the peppers and the goats cheese into a mixer ( adjust the oil if it is too dry)
Serve the Goats Cheese Mousse in a small bowl and place the bowl on a platter with crackers and French toast.
A suggestion from Zia Mirella – you can serve it differently using fresh tomatoes as follows:
- Scoop out the inside of the tomatoes
- Leave the tomatoes to stand up-side down to let out the excess liquid
- Fill the tomatoes with the mixed goats cheese and peppers

HAM MOUSSE
Ingredients:
Approx. 200g of good cooked ham
A few capers – 4-5
2-3 small gerkins in brine
A dash of freshly ground black pepper
A nob of butter.
Preparation:
Put all the ingredients into your mixer.
if the mixture is too dry add a drop of cream.
Serve the Ham Mousse in a small bowl and place the bowl on a platter with crackers and French toast.
This will keep in the fridge covered with some plastic-wrap or silver foil.
